INGREDIENTS
Chicken:
- 700g boneless skinless chicken thighs
- 60g soy sauce
- 60g water
- 50g brown sugar
- 1/2 tsp minced garlic
- 1 tsp sesame oil
- 120g light coconut milk
- 60g pineapple juice
- 1 tin 565g SUNSTAR PINEAPPLE SLICES
Coconut Rice:
- 1 cup white rice or basmati rice
- 300g light coconut milk
- 120g water
- 3/4 tsp kosher salt
- Cilantro leaves and lime wedges for garnish (optional)
INSTRUCTIONS
Chicken:
- Combine the soy sauce, water, brown sugar, garlic, sesame oil, coconut milk and pineapple juice, then pour into a resealable bag.
- Add the chicken into the same resealable bag. Marinate for minimum 2 hours.
- Heat the grill to medium. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until chicken is cooked through.
- Add the pineapple to the grill and cook for 2-3 minutes per side.
- Arrange the pineapple and chicken on a serving plate.
Rice:
- Pour the coconut milk, water, salt, rice into a rice cooker or pot to cook till rice is soft.
- Serve the chicken and pineapple with the coconut rice. Garnish with lime wedges and cilantro if desired.
